Almond Bark Candy

Almond Bark Candy

6 cups (1500 ml) dipping chocolate (white or dark)
1 cup (250 ml)almonds, lightly toasted
¼ teaspoon (1.5 ml) pure almond oil

Melt chocolate in double boiler on low heat. Stir in oil and almonds. Spread on cookie sheet to harden. You may also use pecans, raisins or other dried fruits if desired. Nice to give as packaged Christmas gift.

Cashew Brittle

1 cup (250 ml) granulated sugar
½ cup (125 ml) corn syrup
1 cup (250 ml) unsalted dry roasted peanuts or cashews
1 tablespoon (15 ml) butter
¼ teaspoon (1.5 ml) baking soda
½ teaspoon (3 ml) vanilla extract
½ teaspoon (3 ml) salt

Combine sugar with corn syrup in a microwave proof bowl. Cook on high for 2 minutes.
Stir with a wooden spoon. Microwave for 5 to 7 minutes longer, until temperature reaches 310º F/155º C. on a candy thermometer.
Stir nuts with butter, baking soda, vanilla and salt. Add to hot syrup, stir until well blended.
Pour mixture onto a greased, rimmed baking sheet and spread to ¼-inch thickness. Cool until hard.
Break into bite-sized pieces and store in air-tight container.
