Ambrosia Recipe Salad

This Ambrosia Salad recipe is a traditional Christmas favorite in our house.  But, it can be enjoyed any time of the year.

Ambrosia refers to the food of the Gods in Greek and Roman mythology and this salad lives up to its name.

The list of ingredients are not set in stone. There are many different ingredients (and different Ambrosia recipe salads) that can be used. Such as maraschine cherries, pecans, fruit cocktail to mention a few.



24-Hour Ambrosia Salad


2 eggs beaten
4 tablespoons (60 ml)            vinegar
4 tablespoon (60 ml)             white sugar
1 cup (250 ml)                      whipping cream
2 tablespoon (30 ml)              butter
1 can (10 fl. oz/284 ml)          mandarin orange, cut into pieces
2 cups (500 ml)                     miniature marshmallows
2 cups (500 ml)                     seedless grapes (cut in halves)
1 can (14 fl. oz/398 ml)          pineapple tidbits (can be cut in halves)

Place eggs in microwave dish and whisk. Add vinegar and sugar.
Microwave at MED HIGH stirring every 30 seconds until mixture is thick and smooth.
Remove from oven and add butter. Let cool.
Fold in whipped cream and fruit. Set in mould for 24 hours.

PreparationTip:
For a quicker salad, dream whip, sour cream and sugar and be used in place of the egg, vinegar, sugar, whipping cream and butter dressing.

Health Tip:
Use fat-free, sugar-free yogourt as a dressing for this salad.
