Bread Pudding

If you are looking for an easy dessert, you will find it in Bread Pudding.

Also, very healthy, low fat and quick to prepare.





Blueberry Bread Pudding


1½ tablespoons (28 ml)     sugar
2 tablespoons (30 ml)        corn syrup
1 2/3 cups (420 ml)           blueberries
7½ slices                          bread
4                                      eggs
2 1/8 cups (530 ml)           milk
¼ cup (60 ml)                   sugar
½ teaspoon (3 ml)             vanilla
2 teaspoons (10 ml)           lemon juice (optional

Mix the first three ingredients together in 9 x 5 x 3-inch (23 x 13 x 8-cm) pan.
Bake 10 minutes or cook in microwave 2 minutes.
On top of berries, place bread slices.
Mix the remaining ingredients and pour over bread.
Bake 20 minutes at 300º F. uncovered.



Variations:
Instead of blueberries, use
½ cup (125 ml) raisins
Make it even more nutritious by using whole grain bread.


Pumpkin Bread Pudding

3 cups (750 ml)            dry bread cubes
1½ cups (375 ml)          applesauce
2 tablespoons (30 ml)    butter
1½ cups (375 ml)          cooked or canned pumpkin
2/3 cups (170 ml)          brown sugar, firmly packed
1 teaspoon (10 ml)          cinnamon
½ teaspoon (5 ml)         nutmeg
¼ teaspoon (1.5 ml)      salt
1¼ cups (310 ml)          milk
3                                  eggs, slightly beaten
½ cup (125 ml)              pecans, chopped

In a buttered, casserole, spread half of the bread cubes.
Cover with applesauce and a layer of remaining bread cubes.
Dot with butter. Mix pumpkin and sugar until sugar is dissolved.
Add remaining ingredients, stirring well to blend. Pour filling over bread cubes.
Bake uncovered in a preheated 350º F/175º C. oven for about 1 hour.
Serve warm with whipped cream if desired.
