Cream of Broccoli Cheese Soup




A broccoli cheese soup recipe that is quick and easy to prepare

Highly nutritious and calories can be reduced with the calorie-wise tips.

Creamy Broccoli and Cheese Soup


2 cups (500 ml) chopped celery
1 cup (250 ml) finely chopped onion
1 pkg (10 oz/284 g) chopped broccoli
1 cup (250 ml) water
1 cup (250 ml) cottage cheese
2 cups (500 ml) whole milk
1 can (10 oz/284 ml) cream of chicken soup
½ teaspoon (3 ml) salt, if desired
1/8 teaspoon (.5 ml) pepper

Simmer celery, onion, broccoli and water in saucepan until tender. Set aside.
Blend cottage cheese and milk in blender or food processor until very smooth.
Add chicken soup to cheese-milk mixture; blend.
Add soup-cheese-milk mixture to cooked, undrained vegetables, being careful not to let soup boil. Heat through.

Add salt and pepper.

Calorie-Wise tips:
Reduce the amount of calories by using fat-free cottage cheese, low-fat soup and skim milk.
