Clodhoppers Candy Recipe
3 cups (750 ml) vanilla wafers*
2 cups (500 ml) chopped cashews
2 cups (500 ml) Golden Grahams cereal (crushed in small pieces)
Melt wafers in double boiler. Stir in the other two ingredients. Spread on wax paper. When firm, break into small pieces.
*Variation: replace vanilla wafers with sugar-free white chocolate
1 cup (250 ml) icing sugar
¾ cup (180 ml) smooth peanut butter
3 tablespoons (45 ml) margarine or butter, melted
½ cup (125 ml) graham wafers crumbs
1 pkg. (270 g) chocolate chipits
1 pkg. (270 g) butterscotch chipits
Combine icing sugar, peanut butter and melted margarine or butter. Stir in wafer crumbs and shape into 1-inch balls. Chill. Melt chipits and paraffin over hot water. Dip the peanut butter-wafer balls in melted chipits. Place on wax paper to cool. Store in fridge.
8 oz. (225 g) pkg. cream cheese
4 cups (1000 ml)icing sugar
1½ teaspoon (10 ml) vanilla
12 oz. (340 g) white chocolate, melted
¾ cup (180 ml) chopped pecans
Beat first 3 ingredients until smooth. Add melted chocolate and pecans. Spread into 8-inch (20cm - square) pan and refrigerate.
