Ceasar Salad Recipes with
Mesquite Marinated Chicken
One of easiest ever, Ceasar salad recipes submitted by Jason Baldridge.
Accompanied by a serving of bread, this could be served as a lunch meal. In case you are in the mood, (or maybe you've run out of Caesar dressing)
I have added a recipe for home-made Ceasar dressing.
Mesquite Chicken Ceasar Salad
2-3 Boneless Skinless Chicken Breasts
1 pkg Jack Daniels mesquite marinade in a bag
1 pkg of salad
4 eggs (boiled and diced)
2 cups (500 ml) shredded sharp cheddar
1 avacado (Chopped or diced)
2 tomatillos (chopped or diced)
1 cup (250 ml) croutons
1/2-1 cup (125 ml - 250 ml) dried cranberries
Caesar salad dressing
Marinade chicken in Jack Daniels marinade for 30 minutes and then bake in pre-heated oven at 350º F/175ºC for 20-25 minutes or until done.
Mix all other ingredients in a bowl and refrigerate until chicken is cooked.
Cut chicken down to desired size and mix with rest of salad.
Instead of using prepared Caesar salad dressing you can make your own.
Authentic Ceasar Salad Dressing
¼ Cup (60 ml) olive oil
1 finely chopped clove of garlic
OR ¼ teaspoon (1.5 ml) garlic salt)
1-minute egg (small), shelled
1 teaspoon (5 ml) Worcestershire or HP Sauce
¼ cup (60 ml) lemon juice
½ teaspoon (2.5 ml) salt
1/8 teaspoon (1 ml) pepper
Add garlic to oil.
Mix in other ingredients. Add to salad just before serving.
