I have tried many recipes and this is my all-time favorite. Pastry flour is the secret ingredient that makes these biscuits so fluffy and high.

Buttermilk Cheese Biscuits

2¼ cups          pastry flour                              560 ml
¾ cup             all-purpose flour                       180 ml
3 tablespoons   baking powder                          45 ml
1 teaspoon       salt                                             5 ml
6 tablespoons   shortening                                90 ml
1½ cups          buttermilk                                 375 ml
1 1/3 cups       shredded cheese                     330 ml

Preheat oven to 450º F/230º C.

Sift flour, baking powder and salt together. Cut in shortening; then stir in cheese. Add buttermilk
. Knead on floured surface 10 seconds. Pat dough on floured surface and cut into biscuits. Arrange on a cookie sheet and bake 8 to 10 minutes at 450ºF/230ºC.
Makes about 20 large (3 inch/7.5 cm) biscuits.
