Chicken Casserole Recipe

Nutritious and Easy to Make




The taste of this chicken casserole recipe is maximized with curry powder and lemon juice.

Helpful hints make it healthier.

Chicken & Broccoli Divan

  • 2 cups cubed cooked chicken
  • 3 cups hot cooked broccoli spears
  • 1 can (10 oz/284 ml) cream of broccoli soup
  • ¼ cup chopped onion
  • 1 tablespoon chunky salsa
  • ¼ teaspoon curry powder
  • ½ teaspoon lemon juice
  • ½ cup milk
  • ½ cup shredded cheddar cheese
  • 3 tablespoons bread crumbs
    mixed with 1 teaspoon melted butter OR
  • crushed croutons

Combine chicken with vegetables in shallow 2 quart baking dish.
Mix soup, milk, salsa, curry powder and lemon juice.

Pour mixture over chicken and vegetables.

Sprinkle with cheese, then crumb topping which has been mixed with melted margarine.
Bake at 425º F. for 20 to 25 minutes.

Healthful Hints:

  • Use low-fat, low-sodium cream of broccoli soup
  • Use skim milk
  • Cheddar Cheese can be substituted with reduced-fat cheddar cheese
  • Dry toasted bread crumbs can be used without the margarine
