Chicken Casserole

Three Easy and Quick Recipes

Broccoli and cheese compliment this chicken casserole recipe called Chicken Florentine.
The cook will enjoy the easy preparation.

Following this recipe are two recipes that are even easier.
The names Chicken Hurry and Quick Honey Mustard Chicken are an indication of that.

Chicken Florentine

4 chicken breasts
2 cups chopped broccoli
2 cans mushroom soup
¾ cup mayonnaise
1 tablespoon lemon juice
¾ teaspoon curry powder
1 cup fine bread crumbs
4 tablespoons melted butter
1 cup grated cheddar cheese
Simmer chicken breasts in a little water for 15 minutes and cut into halves.

Place in large casserole dish.

Place 2 cups chopped broccoli on top of chicken.

Mix together mushroom soup, mayonnaise, lemon juice and curry powder and pour over chicken and broccoli.

Mix bread crumbs, melted butter and cheddar cheese; sprinkle over all.

Bake at 350º F. for 45 minutes.

Adagio Teas

Quick Honey Mustard Chicken

5 boneless, skinless chiken breasts
1 tablespoon chopped onion
1 teaspoon cooking oil
½ cup water
¼ cup Dijon mustard
2 tablespoons white wine or orange juice
1½ tablespoons honey
In non-stick fry pan, cook onions in oil until limp. Add chicken breasts and cook until they start to brown.

Mix rest of ingredients together, then pour over chicken.

Turn heat to down until sauce simmers gently. Cover and cook for 5 to 10 minutes.

Uncover and cook for another 15 minutes, turning chicken occasionally.

If sauce becomes too thick, add 1 to 2 tablespoons water.

Chicken Hurry

2½ to 3 lb. chicken parts
½ cup ketchup
¼ cup water
¼ cup packed brown sugar
1 envelope dry onion soup mix
Arrange chicken parts in small roaster or casserole dish.

In small bowl, combine ketchup, water, sugar and soup mix.

Mix together well. Spoon over chicken, making sure some is coating each piece.

Bake covered, in 350º F. for at least 2 hour or until very tender.

Serves 4 to 6.
Can also cook potatoes and carrots with it.
