It rates in quality with other meats
as a complete protein. Minus the skin and rich gravies
or sauces, it can also be a choice for low-cal diets.

Chicken  roast Marinades work equally well with poultry
as with beef. But, because it is dryer and more tender
than beef there are some different rules.

Helpful Hints different from Beef:

  1. Bake at once or marinate in covered pan in refrigerator for 30 minutes or longer.
  2. Liquid salad dressings, i.e., French,
    Italian, etc. are a quick marinade

Use new seasonings sparingly until you learn if the family likes them. Once you have tried experimenting, you will find you can serve poultry frequently, inexpensively, but never monotonously.
There are many methods of preparation.

Rotisserie and barbequing cooking rules are generally the same as for beef. A whole bird is best on the spit as pieces dry out easily. However, brushing with a Marinade or basting sauce frequently helps to keep portions moist.

Cooking Times: Barbequing for a whole bird is approximately the same as roasting.

These cooking techniques and rules can also be applied to turkey. Just don't try putting a turkey over 12 lbs. on a spit. It might end up in the coals.
