Green Chili Bean Soup Recipe




A chili bean soup bursting with flavour.

Add Tex-Mex cheese in the bottom of each soup bowl and the kids are sure to love it.

Green Chilli & Bean Soup


2 onion, chopped
3 tablespoons (45 ml) butter or margarine
3 garlic cloves, minced
3 tablespoons (45 ml) vegetable oil
4 cups (1 liter) chicken broth
4 cups (1 liter) water
28 fl. oz. (795 ml) can tomatoes
4.5 fl. oz. (127 ml) can chopped green chillies
1 teaspoon (5 ml) cumin
14 fl. oz. (398 ml) can kidney beans
1 cup (250 ml) cubed cooked potatoes
˝ teaspoon (3 ml) salt
˝ cup to 1 cup (125 ml to 250 ml) grated Monterey or Tex-Mex Cheese.


Sauté chopped onion and garlic in vegetable oil until tender. Add broth, water and vegetables; then, simmer for approximately 2 hours. Serve grated Monterey cheese in bottom of soup bowl. Tex-Mex cheese mix (Monterey, cheddar with jalapeno peppers) can be used for extra flavour instead of Monterey cheese.
