Chocolate Cupcakes

This chocolate cupcake recipe has always been a great success for me and it is easy to make. They keep for weeks in the freezer.

The chocolate fudge frosting recipe is also easy to make.






CHOCOLATE CUPCAKES

2/3 butter or margarine (room temp.)                                        170 ml
2 cups brown sugar                                                                   500 ml
½ cup cocoa                                                                             125 ml
1 egg
1 cup sour milk OR 1 tbsp. vinegar in 1 cup sweet milk              250 ml
¾ cup hot water                                                                         180 ml
1 tsp. baking soda                                                                         5 ml
2 tsp. baking powder                                                                    10 ml
½ tsp. salt                                                                                     3 ml
2½ cups (625 ml)unsifted cake and pastry flour
OR 2 cups (500 ml) all-purpose flour
1 tsp. vanilla                                                                                  5 ml

In beater bowl, cream butter or margarine, sugar and cocoa.
Add egg and blend. Stir in sour milk and hot water to which 1 tsp. of baking soda has been added.
Mix baking powder, salt, flour and add all at once to the creamed mixture. Add vanilla. Stir with spoon to incorporate, then beat with electric beater for 3 minutes at high speed.
Bake at 350º F. for 18 to 20 minutes.

BITTERSWEET CHOCOLATE FROSTING


2 squares unsweetened Baker's chocolate, cut into pieces
2 tablespoon butter                                                                     30 ml
¼ cup hot milk                                                                              60 ml
1 cup icing sugar                                                                       250 ml
1 tsp. vanilla                                                                                   5 ml

Heat milk and chocolate in microwave. Place in blender jar with other ingredients and process until smooth.
Frosts 3 dozen cupcakes
