Easy Chocolate Fudge Recipe

Easy Chocolate Fudge

¼ cup (60 ml) milk
¼ cup (60 ml) butter
1 (6 oz/168 g) pkg of chocolate pudding powder (not instant)
3 cups (750 ml) sifted icing sugar

Grease an 8-inch square pan and set aside. Combine the milk and butter in a heavy saucepan.
Cook and stir over medium heat until mixture comes to a boil. Add the chocolate pudding powder and bring to a boil again.
Remove from heat and stir in the sifted icing sugar.
Pour into the prepared pan and allow to cool.
Cut into squares with a knife.
Makes 20 squares.

An old-fashioned candy recipe which uses rich whipping cream.
Boiling to the right temperature is the secret. A candy thermometer takes the guess work out of this. However, the water test will work. Just drop some of the mixture into cold water. If it forms a soft firm ball, it is reayd.

Rich Fudge

4 cups (1 litre) brown sugar
1 cup (250 ml) whipping cream
2 tablespoons (30 ml) flour
2 teaspoons (10 ml) baking powder
4 tablespoons (60 ml)butter
2 tablespoons corn syrup

Place all ingredients in heavy 4-quart (4 litre) saucepan.
Bring to boil, stirring until sugar is dissolved. Boil until mixture reach soft ball stage (238º F/115º C).
Remove from heat and cool slightly. Beat until thickened and creamy.
Pour into buttered 8 x 8 pan. Cut when cool.
