Christmas Candy Recipe
A Christmas Candy Recipe that is simplified by using microwave method.
Helpful for beginners making successful old-fashioned home made candy. One difference to remember when using the microwave:
Do not use a conventional candy thermometer. It may only be used outside the oven to verify cold water test, or to judge when candy is cold enough to work.
2 dozen large pecans, halved lengthwise 1 dozen large pecans, halved crosswise *Chocolate Chip Coating
Arrange pecans on sheet of wax paper with 4 long halves for legs and 1 short half for the head of each turtlette. Do 6 Turtlettes at a time.
Butter a glass plate and arrange 6 caramels evenly around the edge. Microwave at High15 to 30 seconds, until soft but not melted on bottom. Cover with wax paper to keep warm. Press caramel down firmly over nuts. Quickly, form into turtle shape with fingers. If caramels become hard, microwave 5 to 10 seconds.
Frost with Chocolate Chip Coating. Or, using 2 forks, dip Turtlettes one at a time in chocolate. Place on wax paper Cool until set. *Chocolate Chip Coating½ cup (125 ml) chocolate chipitsPlace in bowl. With bowl covered, melt at 50% (medium) power until most of the chipits are shiny and soft. Stir well.
1½ teaspoon (5 ml) vinegar 1 cup (250 ml) sugar 1 cup (250 ml) corn syrup 1 teaspoon (5 ml) butter 12 cups (3 liters) air popped popcorn ¼ teaspoon (1.5 ml) baking soda 1 teaspoon (5 ml) water
Decorations: Suckers, gum drops, green or red shoestring licorice, candy sprinkles,round toothpicks
Heat the first four ingredients to a hard ball stage. (drop small droplet into cold water. If it forms a firm ball then it is ready) or use a candy thermometer and heat to 250º F. Add baking soda and popcorn.
When cool enough to handle shape into form of Christmas tree.
Decorate with suckers, gum drops, licorice and sprinkles using toothpicks to hold gumdrops and licorice.
