Aunt Pearls Fudge Recipe

2 tablespoon (30 ml) butter
1 can (12 fl. oz/370 ml) evaporated milk
1½ cup (375 ml) sugar
½ teaspoon (3 ml) salt
2 cups (500 ml) marshmallows
1 cup (250 ml) chocolate chips
1 cup (250 ml) butterscotch or peanut butter chips
1 cup (250 ml) peanuts

Boil first 4 ingredients for 5 minutes; then add marshmallows, chocolate, chips, butterscotch or peanut butter chips and peanuts.
Stir until melted and cool. Cut into squares.

Black Forest Fudge

¾ (180 ml)cup sweetened condensed milk
2 cups (500 ml) semi-sweet chocolate chips
1 teaspoon (5 ml) almond extract
²/3 cup (170 ml) red candied cherries
½ cup (125 ml) almonds, chopped
½ cup (125 ml) miniature marshmallows

Line square pan with foil up and over the side of the pan. Butter the foil.
In a large glass bowl, combine chocolate and milk. Microwave on high for 1½ minutes until melted, stirring once.
Stir until smooth. Add almond extract. Stir. Add cherries, almonds and miniature marshmallows.
Stir again. Pour into pan. Refrigerate until set. Lift from the pan, cut into squires and store in the fridge, well-wrapped.
