Leftover Roast Beef Recipe





This no-fuss, leftover roast beef recipe is perfect for weeknight family meals.

Quick prep time - under 15 minutes.

Do ahead, then pop it in the oven and hour before mealtime.


Beef and Mushroom Stew

  • 2 to 3 cups left over roast beef (cubed)
  • 1 (10 oz/284 ml) can of mushroom soup
  • 1 cup milk
  • 1 cup frozen peas
Mix milk and mushroom soup in casserole dish. Add cubed beef and vegetables. Bake in 350º F/175º C oven for approoximately 1 hour.

Variations

1 cup of mixed frozen vegetables in place of peas.

1 (10 oz/284 ml) can sliced mushrooms, drained

Tip:
  • Evaporated can milk, undiluted, works well.
  • Freeze bits of left over beef steak and roast to use in this recipe.
