Marinated Chicken
The chicken parts are cooked right in the marinade.- 3 lbs. chicken, cut up
- 1 cup ketchup
- ¾ cup brown sugar or less
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- ¼ cup vinegar
- 1 package onion soup mix
Place chicken in a baking dish. Mix remaining ingredients and pour over chicken Allow chicken to marinate at least 15 minutes (overnight is preferred). Bake marinated chicken uncovered in a preheated 350º F. oven for 40 to 50 minutes. Serves 4There is no need to mix a marinade with the following recipe. The Italian Dressing marinade is drained and reserved; then added before cooking. - ¼ cup Italian dressing
- 4 chicken breasts
- 1 egg, slightly beaten
- 2 tablespoons water
- ½ cup Parmesan cheese
- 1/3 cup fine dry bread crumbs
- 2 tablespoons snipped parsley
- ½ teaspoon salt
- 1/8 teaspoon pepper
Pour dressing into a 13 x 9 x 2 inch dish; add chicken breasts, turning to coat on all sides. Cover and refrigerate for 3 to 4 hours, occasionally tilting dish and spooning dressing over chicken. Drain and reserve dressing. Combine egg and water. In plastic bag, combine cheese, bread crumbs, parsley, salt and pepper. Dip chicken in egg mixture, then shake a few pieces at a time in crumb mixture to coat. Return coated chicken to baking dish; spoon remaining dressing over chicken. Bake at 350º F. for 40 to 45 minutes until tender. The next recipe can be used with chicken or pork and is cooked on the barbeque. The spices can be altered to your personal preference. For ideas see
Marinating Tips
- ¾ cup fresh lemon juice (4 to 5 lemons)
- 1 cup oil
- 3 garlic cloves (crushed)
- 1 teaspoon oregano
- salt & pepper to taste
- 3 to 4 lbs. Chicken breast or pork tenderloin
Blend lemon juice, oil, garlic cloves, oregano, salt and pepper until smooth. Marinate chicken/pork overnight (or at least 5 hours). Cook on top rack of barbeque on low. Keep spooning mixture over chicken/pork until cooked. Allow about 15 to 20 minutes per side. Mixture will flare-up so have water spray bottle on hand.
