Mexican Soup

An easy and delicious type mexican soup.


Spiced up with chilies, garlic and cumin, this soup is bursting with flavour and nutrition.




Mexican Soup Supreme

1 pound (450 g)                 lean ground beef
1 teaspoon (5 ml)               chili powder
2                                       onions, chopped
3                                       garlic cloves, minced
3 tablespoons (45 ml)         olive oil
4 cups (1 L)                       chicken broth or beef broth
2 cups (500 ml)                  water
28 oz. (875 ml)                   diced tomatoes
½ cup (125 ml)can             chopped green chilies
1 teaspoon (5 ml)               cumin
14 ounces (398 ml)             kidney beans

Brown ground beef in skillet over medium high heat.
If using regular ground beef, drain then rinse with
boiling water to remove fat.
Add remaining ingredients.  Simmer on low heat for 1 to 2 hours until flavours are blended.
Serve grated Monterey in bottom of soup bowl.
Tex-Mex cheese can be used for extra flavour
instead of Monterey cheese.
