Black Forest Cherry Cookie Recipe1¾ cups (425 ml) all-purpose flour1/3 cup (75 ml) cocoa ½ teaspoon (2 ml) salt ½ teaspoon (2 ml) baking soda 2/3 cup (150 ml) butter 1 cup (250 ml) sugar 1 egg 1 teaspoon (5 ml) vanilla extract ½ teaspoon (2 ml) almond extract 1/3 cup (75 ml) buttermilk 1½ cups (375 ml) maraschino cherries, chopped, drained (reserve juice for Chocolate Glaze) 1 cup (250 ml) nuts, chopped Chocolate glaze Maraschino cherry halves Sift together flour, cocoa, baking soda and salt. Cream butter; gradually beat in sugar. Beat in egg, vanilla and almond extract. Add dry ingredients alternately with buttermilk. Stir in chopped cherries and nuts. Drop spoonfuls onto ungreased cookie sheets. Bake in pre-heated 375º F. (190º C) oven 10 to 12 minutes. Remove from pans. Cool completely on wire racks. Frost with Chocolate Glaze.(see below) Top with cherry halves. Makes about 4 dozen. Chocolate Glaze ¼ cup butter, melted ¾ cup (75 ml) cocoa ¼ cup (50 ml) reserved maraschino cherry juice ¼ teaspoon (1 ml) almond extract 2 cups (500 ml) icing sugar Stir cocoa in melted butter.
