Potato Salad Recipes

Two Potato Salad Recipes,
Different but the Same



Both of these potato salad recipes avoid the high fat dressings.

One uses olive oil and vinegars.

The other adds yogourt.

Each has their own variations of zesty flavor.

French Egg and Potato Salad

  • 6 medium potatoes, peeled, cooked and diced
  • 4 hard-cooked eggs, peeled and chopped

  • 2 green onions, chopped
  • 2½ tablespoon vinegar
  • 1 teaspoon (5 ml) balsamic vinegar
  • 2/3 Cup olive oil
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp pepper
  • paprika, for garnish



In a bowl, toss together potatoes, eggs and green onions.
In a small jar with a lid, shake together oil, vinegar, mustard, salt and pepper.
Pour vinegar mixture over potatoes; toss gently until well mixed.
Spoon into serving bowl; sprinkle with paprika.
Cover and refrigerate.
For best flavour, remove from refrigerator 15 minutes before serving.

Variation:

German-style Egg and Potato salad recipe
Add ½ cup chopped dill pickles and 3 slices cooked, crumbled bacon to potato mixture before adding vinaigrette.
Substitute grainy Dijon mustard for the smooth Dijon mustard in vinaigrette.

Potato Salad with Horseradish

  • 2 lbs. potatoes cut in chunks
  • ¼ cup olive oil
  • 1½ tbsp red wine vinegar
  • Salt
  • ½ cup sour cream
  • ½ cup plain yogourt
  • 2 tbsp horseradish
  • ¼ cup fresh dill
  • 1 tbsp lemon juice, freshly squeezed
  • 3 stalks of celery, sliced
  • 1 avocado Freshly ground black pepper


Cook the potatoes then remove heat allow to cool.
Meanwhile, whisk oil and vinegar together in a large bowl.
Season to taste with salt.
When potatoes are cool, cut into 1-inch cubes.
Toss them in the oil and vinegar so they are coated well, and set them aside to cool to room temperature, tossing occasionally.
Mix sour cream, yogourt and horseradish.
Mince the dill and add it to the sour cream mixture.
Add to celery and toss to combine.
Then add the sour cream mixture.
Cut avocados and mix with lime juice.
Add to salad along with additional pepper and either serve immediately or chill for 30 minutes and then serve.
