Strawberry Spinach Salad Recipe

Here is a salad recipe that appeals to the eye as well as the taste buds. The strawberries and orange sections add contrasting color. The corresponding dressing is sweet and flavourful.

• 1 pkg. fresh spinach
• 1 cup (250 ml)fresh sliced mushrooms
• 1 can mandarin orange sections

Dressing:

• ¼ cup white sugar
• 1½ tablespoon poppy seeds

• ¼ teaspoon paprika
• ½ cup oil

• ¼ cup raspberry vinegar
• ¼ teaspoon Worcestershire sauce 1 green onion finely chopped

Caramelized Almonds:

• ½ cup slivered almonds
• 2 teaspoons water

Combine dressing, shake and set aside. Can be made 1 - 2 days ahead.
Cook almonds in non-stick fry pan. Cook over medium heat. Stir constantly until almonds turn golden brown.
Combine spinach, strawberries and orange sections. Add dressing just before serving. Garnish with almonds.
