Beef Tenderloin
This steak recipe uses tenderloin of beef-- the oyster of a beef carcass.
A common tenderloin beef recipe is the filet mignon. The filet is cut crosswise
in thick steaks and wrapped in bacon before cooking.
The following recipe uses the filet cut lengthwise.
Flaming Steak
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/8 teaspoon sage
- ¼ teaspoon rosemary
- ½ teaspoon finely crushed bay leaf
- 1½ lb. (675 g) filet of beef, split lengthwise and pounded lightly
- ¾ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 3 tablespoon warm cognac
Heat the oil and butter in frying pan; mix in next 3 ingredients, add meat.
Cook 2 minutes each side, or to desired degree of doneness.
Season meat with salt and pepper, pour cognac over steak, set aflame.
Turn the filet over.
Serves 4 to 6.
